Minnie Mouse Cupcakes

Cupcakes are one of my favorite things in life, and it comes shortly after traveling and looking at pictures of 5SOS (you know, not in a creepy way, but in a cute and adorable way) and of course spending time with my family and friends. 

This recipe is from my recipe book from hummingbird bakery in London. And as I think that the best part about cupcakes is to design them, I did today decide to make Minnie Mouse themed cupcakes. And well… I would say that I’m very happy with the way they turned out.



Ingredients for muffin 
100 g flour
20 g Cocoa
140 g sugar
1 ½ tsk baking soda
One pinch of salt
40 g unsalted butter
1 ¼ dl milk
1 egg

¼ tsk vanilla extract

How to do

Start with turning up the oven to 175 C.

Then blend the flour, cocoa, sugar, baking soda, salt and butter in a bowl with a electric whisk at a low speed. 

Now blend the milk, egg and the vanilla extract in a new bowl. Pour half of milk mix into the flour mix and blend it on a high speed until all of the lumps are gone. 

Pour down the rest of the milk mix and blend it at a lower speed. Blend until it looks smooth. 

Put the batter in the muffin forms and fill up 2/3 of the form. Let them be in the oven for 20-25 minutes and then take them out. Let them cool down and start with the icing.

Ingredients to icing

300 g icing sugar
50 g unsalted butter
125 g cream cheese
And vanilla extract if you want

How to do

Blend the icing sugar and the butter and whisk it in a middle speed. Then pour in the cream cheese and the vanilla extract and blend again until it’s a smooth batter. And now it’s done and it’s time to start decorating the cupcakes.

All of the measurements are in Swedish measurements so if you are from another country you might have to convert them.
